Kitchen Manager and Lead Chef Recruitment

Perform functions as Kitchen Manager and lead chef to plan, manage, and control Back of House (BoH) restaurant operations, ensuring maximization of revenues and minimizing of costs, making decisions controlled by precedent and within limits of established policies.

  

GENERAL RESPONSIBILITIES

  • Ensure food quality and presentation standards are met for all dishes leaving the kitchen and work as supervising Chef in preparation of dishes such as Thai boat noodles and desserts, as well as other traditional Thai dishes such as Tomyum soup, Larb Salad, Padthai, Drunken Noodle, Hat Yai Fried Chicken and Panang Curry.
  • Expertise  in all BoH employee roles, and support the team by filling in wherever needed
  • Manage all kitchen employees, ensuring completion of required activities and adherence to all applicable policies and procedures
  • Manage procurement, receiving, and storage of all raw ingredients, dry goods, and prepared foods to be used for Thai recipes
  • Screen, interview, and recommend hiring of candidates for all BoH worker positions
  • Ensure all onboarding activities for new kitchen worker hires are successfully executed
  • Support the training of kitchen employees and performance evaluations,  
  • Achieve goals for Inventory Turns, Food Costs, and kitchen Direct Labor Costs, and other metrics as assigned
  • Produce a weekly kitchen work schedule 
  • Host daily team huddles to promote company valves and to discuss issues, concerns, and successes from the latest shift
  • Promote a culture of continuous improvement by soliciting ideas from the team for improvements, by contributing your own ideas, screening ideas for implementation, and assigning responsibility for completion of related projects.

QUALIFICATIONS

  • Must have Culinary Arts/ Food Manager Certification 
  • Associates degree in Restaurant Management/Culinary Arts minimum
  • Extensiveexperience in a commercial kitchen required
  • Deep understanding of and /experience in traditional Thai recipes and use and preparation of Thai ingredients 
  • Thai language fluency is preferred but not required in order to communicate effectively with Thai-speaking workers.
